Recipe: Black bean salsa


Eating whole grains, legumes and vegetables are what keep you full and satisfied for ages. By whole grains i mean THE WHOLE GRAIN, not the grain smashed into flour and mixed with other things. 

Black beans
Red rice
Avocado
Spring onion
Red pepper
corn
Fresh parsley
Fresh coriander
Fresh celery
Kombu seaweed

Sauce
2 heaped tbsps Tahini (pure ground sesame seeds)
1 Hot pepper
3 tbsps Water
½ a lime juiced
1 clove Garlic
Sea salt or tamari to taste
 

Method
Soak the black beans overnight

Cook with a post stamp sized piece of Kombu until soft, drain and rinse under cold water

cook red rice – 1 cup rice to 2 cups water, until water  is all absorbed

Chop all the veggies and fresh herbs

Make the sauce by blending all the ingredients together in a blender

Mix the veggies, beans, rice and sauce

Put on a nice plate

Sit down somewhere comfortable

Take a few moments to feel grateful for the food

Eat slowly, chewing well each mouthful

Enjoy all the tastes and textures as you eat.

Take your time

Stop when you have had enough – even if you haven’t finished everything on your plate, you can always save it for later
