Recipe: Lemon and date squares
ngredients:
¾ cup coconut oil
½ cup rice syrup
2 cups spelt flour
3 cups rolled oat flakes
pinch of salt
Juice of 3 lemons
300g dates
¼ cup water
Method:
Melt the coconut oil and mix in the rice syrup and pinch of salt
Add the flour and oats mix well.
Divide the dough into 3rds. Roll 2/3rds out flat on a baking sheet and bake in the oven on 180C for 20min.
Meanwhile blend the dates, water and juice form 3 lemons in the blender until smooth
when the base comes out the oven, spread the date paste on the top and then crumble the remaining 3rd of the dough over the top. Press down and bake for another 20min or until lightly brown on the top.
Let them cool down before you cut yourself a piece, you can put them in the freezer if you want them to hurry up.
