Recipe: Banana muffins

I have been attempting to make banana muffins for years and many recipes I have tried have come out very dense and heavy, i finally figured out this recipe which is so light and fluffy, the secret is psyllium husk, I love using it in baking, it is the best egg replacer ever, and it has many health befits!

 

Ingredients:

4 large bananas that are over ripe

2/3 cup water
1tsp vanilla or 1 vanilla pod

2/3 cup of coconut oil

10 dates

2 tbsp psyllium husk

2 cups of whole spelt flour

2tsp baking soda (good quality)
Cinnamon to taste 

pinch of salt
optional: 1 cup sesame seeds/ walnuts/pecans 

 

Method:
Blend bananas, water, vanilla, coconut oil and dates till smooth.
Add the psyllium, flour, baking soda, salt and cinnamon, blend until smooth
Add the optional nuts or seeds and stir in.

 

Bake on 180 for 30 min or until a tooth pick goes through and comes out dry.
